Family Friendly Recipes

Do you have a favourite family recipe that everyone loves?

Sometimes it's tricky to feed the whole family food that they like. It's even more difficult if you have a limited food budget on which to base your weekly family meals.

We are compiling a family recipe book full of dishes that are quite simple to prepare, will appeal to the whole family, and don't cost an arm and a leg to buy the ingredients for.

Below are some favourite family recipes that have been sent in by our loyal readers. We hope you can find something here that your whole family will enjoy!

The following 3 recipes were sent in by Sara Dave from Stonehouse.

 

Super Quick Bean Bake (Serves 4, takes 10 mins)

 

Chop half an onion & 2 cloves of garlic and gently fry in pan until softening (2-3mins)
Add 400g tin of Cannellini beans, and 400g tin of chopped tomatoes and stir in thoroughly.
Cook on a medium heat for 2-3 mins then add 100g of chopped chorizo sausage.
Stir well and tip all into an ovenproof dish.
Cover with grated cheese and put under a medium grill for 4-5 mins until the cheese is bubbling.
Serve immediately with warm bread.
 
This is a very versatile recipe - you can use any beans (kidney, borlotti or even chick peas), and it also works well with pepperoni if you do not have chorizo. Vegetarians can replace the chorizo with chopped mushrooms & peppers.

 

 

Cheesy Mushroom Pancakes (Takes 5-8 mins)

 

For each person, take 2 bread tortillas,  spread one side with some soft cheese (you can get  brands with garlic and/or herbs eg 'Boursin'), then add thinly sliced mushrooms (as many as you want-  depends how hungry you are!). Roll up the tortillas, place on a baking tray and cook in the oven for 5 minutes to warm through. Serve with salad.

 

 

Orange Cinnamon Bananas (serve 2, takes 5 mins)

 

Heat a knob of butter in a frying pan, add one chopped banana and cook on a gentle heat until banana starts to soften. Add half a teaspoon of cinnamon and 2 tablespoons of orange juice and cook for a further 2 minutes mixing well so that the bananas begin to absorb some of the orange juice and are getting slightly 'mushy'. Serve over ice cream or on pancakes.

MUD BALLS

1 cup peanut butter
1/4 cup honey
1/2 cup dry powdered milk
1/2 cup raisins
Crushed graham crackers
Drinking chocolate powder (optional)

1. Mix all ingredients together in a bowl.
2. Form the mixture into balls.
3. Place a small amount of drinking chocolate powder on a plate
    and roll the balls in the powder (optional).
4. Eat as a tasty snack or refrigerate and serve later. Yum!!
